In a large mixing bowl, combine the warm water, yeast, and granulated sugar. Let sit for about 5 minutes until the mixture becomes frothy.

Add the bread flour, kosher salt, and melted butter to the yeast mixture. Mix until a dough begins to form.

Knead the dough on a floured surface for about 8-10 minutes until it is smooth and elastic.

Place the dough in a lightly oiled bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.

Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper.

In a large pot, bring the 8 cups of water and baking soda to a boil.

Punch down the dough and divide it into 8 equal pieces. Shape each piece into a ball.
