Ingredients

  • 7 g active dry yeast
  • 80 g baking soda
  • 600 g bread flour
  • coarse sea salt
  • 1 egg yolk
  • 25 g granulated sugar
  • 10 g kosher salt
  • 60 g unsalted butter
  • 360 ml warm water
  • 2000 ml water

Directions

Step 1
In a large mixing bowl, combine the warm water, yeast, and granulated sugar. Let sit for about 5 minutes until the mixture becomes frothy.
Step 2
Add the bread flour, kosher salt, and melted butter to the yeast mixture. Mix until a dough begins to form.
Step 3
Knead the dough on a floured surface for about 8-10 minutes until it is smooth and elastic.
Step 4
Place the dough in a lightly oiled bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.
Step 5
Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper.
Step 6
In a large pot, bring the 8 cups of water and baking soda to a boil.
Step 7
Punch down the dough and divide it into 8 equal pieces. Shape each piece into a ball.

Carefully place each dough ball into the boiling water and cook for 30 seconds. Remove with a slotted spoon and place on the prepared baking sheet.
Step 9
Brush each bun with the egg yolk mixture and sprinkle with coarse sea salt.
Step 10
Bake the buns in the preheated oven for 15-18 minutes, or until golden brown.
Step 11
Remove the buns from the oven and allow them to cool on a wire rack before serving.
