Step 1
Preheat your oven to 160°C (320°F).

Season the beef short ribs with salt and black pepper.

Heat the olive oil in a large oven-safe pot over medium-high heat. Brown the ribs on all sides, then remove and set aside.

In the same pot, add the chopped onion, carrots, and celery. Cook for about 5 minutes until softened.

Add the minced garlic and tomato paste, and cook for another 2 minutes.

Pour in the red wine and beef broth, stirring to combine.

Return the ribs to the pot, making sure they are submerged in the liquid. Add the thyme sprigs and bay leaves.

Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven.

Cook for about 3 hours, or until the ribs are very tender.

Remove the pot from the oven. Serve the ribs with the braising liquid and vegetables.
