Ingredients

  • 100 grams bacon
  • 400 grams canned tomatoes
  • 400 grams cannellini beans
  • 2 carrots
  • 2 celery stalks
  • 1000 milliliters chicken broth
  • 200 grams dried pasta
  • 0.5 cup fresh parsley
  • 3 garlic cloves
  • 1 tablespoon olive oil
  • 1 onion
  • pepper
  • salt

Directions

Step 1
Heat the olive oil in a large pot over medium heat. Add the chopped bacon and cook until crispy. Remove and set aside.
Step 2
In the same pot, add the diced onion, carrots, and celery. Cook until the vegetables are tender, about 5-7 minutes.
Step 3
Add the minced garlic and cook for another minute until fragrant.
Step 4
Stir in the crushed tomatoes and chicken broth. Bring to a boil.
Step 5
Add the drained and rinsed cannellini beans to the pot. Reduce the heat and let it simmer for about 10 minutes.
Step 6
Stir in the dried pasta and cook until the pasta is al dente, about 10 minutes.
Step 7
Return the cooked bacon to the pot and stir in the chopped fresh parsley. Season with salt and pepper to taste.
Step 8
Serve the soup hot, garnished with additional parsley if desired.
