Ingredients

  • 1 tbsp balsamic vinegar
  • 4 beets
  • 100 g goat cheese
  • 1 tsp honey
  • 150 g mixed greens
  • 2 tbsp olive oil
  • 0.5 tsp pepper
  • 1 tsp salt
  • 50 g walnuts

Directions

Step 1
Preheat the oven to 200°C (400°F).
Step 2
Wash and trim the beets, then wrap each beet in aluminum foil.
Step 3
Roast the beets in the preheated oven for 45-60 minutes, or until they are tender when pierced with a fork.
Step 4
Allow the beets to cool, then peel and cut them into bite-sized pieces.
Step 5
In a large bowl, combine the mixed greens, roasted beets, crumbled goat cheese, and walnuts.
Step 6
In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper.
Step 7
Drizzle the dressing over the salad and toss to combine.
