Agedashi Tofu is a classic Japanese dish featuring crispy, deep-fried tofu served in a flavorful broth. This dish is both simple and elegant, making it perfect for any occasion.

Ingredients

  • 240 ml dashi
  • 400 g firm tofu
  • 60 g grated daikon radish
  • 2 green onions
  • 30 ml mirin
  • 60 g potato starch
  • 30 ml soy sauce
  • 500 ml vegetable oil

Directions

Step 1
Drain the tofu and wrap it in a clean kitchen towel. Place a weight on top and let it sit for 20 minutes to remove excess moisture.
Step 2
Cut the tofu into bite-sized cubes.
Step 3
Coat each tofu cube evenly with potato starch.
Step 4
Heat the vegetable oil in a deep pan or fryer to 180°C (350°F).
Step 5
Fry the tofu cubes until they are golden brown and crispy. Remove and drain on paper towels.
Step 6
In a small saucepan, combine the dashi, soy sauce, and mirin. Bring to a simmer over low heat.
Step 7
Serve the fried tofu in bowls, pour the hot broth over the tofu, and garnish with grated daikon radish and sliced green onions.
