Cook the rice noodles according to the package instructions, drain and set aside.

In a large pot, heat a bit of oil over medium heat and add the minced garlic and grated ginger. Sauté until fragrant.

Add the sliced chicken breast to the pot and cook until no longer pink.

Stir in the red curry paste and cook for another minute.
