  • 1 bay leaf
  • 0.5 tsp black pepper
  • 14.5 oz canned tomatoes
  • 2 carrots
  • 2 celery stalks
  • 3 cloves garlic
  • 2 cups green beans
  • 1 ham bone
  • 1 onion
  • 0.5 cup parsley
  • 3 potatoes
  • 1 tsp salt
  • 8 cups water

Directions

Step 1
Place the ham bone in a large pot and cover with water. Bring to a boil, then reduce to a simmer and cook for 1 hour.
Step 2
Remove the ham bone and set aside to cool. Add the carrots, celery, potatoes, onion, and garlic to the pot and simmer for 20 minutes.
Step 3
Add the diced tomatoes, green beans, salt, pepper, and bay leaf to the pot and continue to cook for another 20 minutes.
Step 4
Once the ham bone is cool enough to handle, remove any meat from the bone, chop it up, and return it to the pot.
Step 5
Simmer the soup for an additional 10 minutes, then remove the bay leaf.
Step 6
Stir in the chopped parsley just before serving. Enjoy your hearty ham bone and vegetable soup!
