Preheat your oven to 175°C (350°F).

Spread the almonds on a baking sheet and roast for 10-12 minutes until they are lightly toasted.

Allow the almonds to cool slightly, then transfer them to a food processor.

Process the almonds for about 10-15 minutes, scraping down the sides as needed, until a smooth butter forms.

Add the salt and honey (if using), and process again until well combined.
