  • 1 banana heart
  • 1 tsp black pepper
  • 1 bok choy
  • 2 eggplant
  • 3 tbsp fish sauce
  • 5 cloves garlic
  • 200 g green beans
  • 2 tbsp oil
  • 1 onion
  • 1.5 kg oxtail
  • 200 g peanut butter
  • 1 tsp salt
  • 2 L water

Directions

Step 1
In a large pot, heat oil over medium heat. Add the chopped onion and minced garlic, sauté until fragrant.
Step 2
Add the oxtail pieces to the pot and cook until they are browned on all sides.
Step 3
Pour in the water and bring to a boil. Reduce the heat and let it simmer for about 2 hours or until the oxtail is tender.
Step 4
Stir in the peanut butter until it is fully dissolved into the broth.
Step 5
Add the banana heart, eggplants, and green beans to the pot. Cook until the vegetables are tender.
Step 6
Season the stew with fish sauce, salt, and black pepper to taste.

Finally, add the bok choy and let it cook for another 5 minutes.

Serve the stew hot with steamed rice.
