  • 210 grams all-purpose flour
  • 2 teaspoons baking powder
  • 2 bananas
  • 1 egg
  • 100 grams granulated sugar
  • 60 grams melted butter
  • 60 ml milk
  • 0.5 teaspoon salt
  • 1 teaspoon vanilla extract

Directions

Step 1
Preheat your oven to 375°F (190°C). Line a mini muffin tin with paper liners or grease with nonstick spray.
Step 2
In a large bowl, whisk together the flour, baking powder, and salt.
Step 3
In another bowl, mix the mashed bananas, sugar, egg, melted butter, milk, and vanilla extract until well combined.
Step 4
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
Step 5
Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Step 6
Bake for 12-15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Let the muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.
