Directions
Step 1
In a large skillet, heat 2 tbsp of olive oil over medium-high heat.

Season the chicken breasts with salt and black pepper.

Add the chicken to the skillet and cook for about 5-7 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining 1 tbsp of olive oil and minced garlic. Sauté for 1-2 minutes until fragrant.

Add the orzo to the skillet and cook for another 2 minutes, stirring frequently.

Pour in the chicken broth and lemon juice, bring to a boil, then reduce the heat to low. Cover and simmer for about 10 minutes, or until the orzo is tender and the liquid is absorbed.

Return the chicken breasts to the skillet, nestling them into the orzo. Cook for an additional 2 minutes to reheat the chicken.
Step 8
Garnish with chopped parsley before serving.
