Chakalaka is a South African vegetable relish, usually spicy, that is traditionally served with bread, pap, samp, stews, or curries.
Directions
Step 1
Heat the vegetable oil in a large pot over medium heat.
Step 2
Add the onions and sauté until they are soft and translucent.
Step 3
Add the bell peppers, garlic, and ginger, and cook for another 5 minutes.
Step 4
Stir in the curry powder, paprika, and chili powder. Cook for 2 minutes to release the flavors.
Step 5
Add the grated carrots and chopped tomatoes. Cook for about 10 minutes, stirring occasionally.
Step 6
Add the baked beans and mix well. Allow the mixture to simmer for another 10 minutes.
Step 7
Season with salt and black pepper. Adjust seasoning to taste.
Step 8
Remove from heat and let it cool slightly before serving.
