Step 1
Preheat your oven to 200°C (400°F).

In a saucepan, combine the raisins, sugar, and 180 ml of water. Cook over medium heat until the mixture starts to boil.

In a small bowl, mix the cornstarch and 60 ml of water until smooth. Add this mixture to the boiling raisin mixture and stir constantly until it thickens.

Remove from heat and stir in the lemon juice and butter until well combined.

Roll out one pie crust and fit it into a 9-inch pie plate. Pour the raisin filling into the crust.

Roll out the second pie crust and place it over the filling. Seal and flute the edges, and cut a few slits in the top crust to allow steam to escape.

Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown.
