Step 1
Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

In a food processor, combine the chickpeas, onion, garlic, parsley, coriander, cumin, ground coriander, and salt. Process until the mixture is well combined but still slightly chunky.

Add the baking powder and flour to the mixture and pulse a few more times until well incorporated.
Step 4
Using your hands, form the mixture into small balls or patties and place them on the prepared baking sheet.
Step 5
Brush the falafel with olive oil to help them crisp up during baking.
Step 6
Bake in the preheated oven for 25-30 minutes, flipping them halfway through, until they are golden brown and crispy.

Serve warm with your favorite dipping sauce or in a pita with fresh vegetables.
