Sfincione, a traditional Sicilian pizza, is a delightful dish typically enjoyed during Christmas. It features a thick, soft crust topped with a flavorful tomato sauce, onions, anchovies, and a generous amount of breadcrumbs.

Ingredients

  • 500 g all-purpose flour
  • 6 anchovy fillets
  • 100 g breadcrumbs
  • 800 g canned tomatoes
  • 7 g dry yeast
  • 100 g grated pecorino cheese
  • 50 ml olive oil
  • 2 onions
  • 10 g oregano
  • 10 g salt
  • 300 ml warm water

Directions

Step 1
In a large bowl, mix the flour, warm water, dry yeast, and salt to form a dough. Knead for about 10 minutes until smooth.
Step 2
Cover the dough with a damp cloth and let it rise in a warm place for about 2 hours or until it doubles in size.

While the dough is rising, prepare the sauce. In a pan, heat olive oil and sauté the chopped onions until golden.

Add canned tomatoes, anchovy fillets, and oregano. Let it simmer for about 15 minutes.

Preheat your oven to 200°C (392°F).

Once the dough has risen, spread it out onto a greased baking sheet, forming a thick crust.

Pour the tomato sauce over the dough, spreading it evenly.

Sprinkle breadcrumbs and grated pecorino cheese generously over the top.

Bake in the preheated oven for about 30 minutes or until the crust is golden and the toppings are bubbly.

Let it cool for a few minutes before slicing and serving.
