Step 1
Preheat your oven to 180°C (350°F).

In a bowl, mix the cream cheese, shredded cheddar cheese, minced garlic, and chopped spinach until well combined.

Cut a slit along the length of the pork tenderloin to create a pocket, being careful not to cut all the way through.

Stuff the cheese mixture into the pocket of the pork tenderloin.

Secure the opening with toothpicks to keep the stuffing inside.

Rub the outside of the pork with olive oil, salt, black pepper, and paprika.

Place the pork tenderloin in a baking dish and bake for 40-45 minutes, or until the internal temperature reaches 63°C (145°F).
