Ingredients

  • 2 tbsp cilantro
  • 60 ml lime juice
  • 1 tbsp lime zest
  • 1 tbsp olive oil
  • 250 g pineapple chunks
  • 1 tsp salt
  • 480 ml water
  • 200 g white rice

Directions

Step 1
Rinse the rice under cold water until the water runs clear.
Step 2
In a medium saucepan, bring the water to a boil.
Step 3
Add the rice and salt to the boiling water. Reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.
Step 4
While the rice is cooking, heat the olive oil in a pan over medium heat.
Step 5
Add the pineapple chunks to the pan and cook for 5-7 minutes, or until they start to caramelize.
Step 6
Once the rice is cooked, remove it from the heat and let it sit, covered, for 5 minutes.
Step 7
Fluff the rice with a fork and stir in the lime juice, lime zest, caramelized pineapple chunks, and chopped cilantro.
Step 8
