Step 1
In a large bowl, combine ground beef, breadcrumbs, egg, Parmesan cheese, minced garlic, salt, and pepper. Mix until well combined and form into small meatballs.
Step 2
Heat olive oil in a large pot over medium heat. Add the meatballs and cook until browned on all sides. Remove meatballs and set aside.

In the same pot, add chopped onion, diced carrot, and diced celery. Cook until vegetables are tender, about 5 minutes.

Add chicken broth and canned tomatoes to the pot. Bring to a boil.

Return meatballs to the pot. Reduce heat and let simmer for 20-25 minutes, until meatballs are cooked through.

Season with additional salt and pepper to taste. Stir in chopped parsley before serving.
