Ingredients

  • 1 stalk celery
  • 1 tablespoon Dijon mustard
  • 6 eggs
  • 0.5 cup Greek yogurt
  • 2 green onion
  • 1 tablespoon lemon juice
  • 0.5 teaspoon pepper
  • 0.5 teaspoon salt

Directions

Step 1
Place the eggs in a saucepan and cover with water. Bring to a boil over medium-high heat.
Step 2
Once boiling, cover the saucepan and remove from heat. Let the eggs sit for 12 minutes.
Step 3
Drain the hot water and transfer the eggs to a bowl of ice water. Let them cool for 5 minutes.

Peel the eggs and chop them into small pieces.
Step 5
In a large bowl, mix together the Greek yogurt, Dijon mustard, lemon juice, green onions, celery, salt, and pepper.

Add the chopped eggs to the bowl and gently stir to combine.
