Ingredients

  • 10 grams active dry yeast
  • 240 grams all-purpose flour
  • 30 grams flax seeds
  • 60 ml honey
  • 30 ml olive oil
  • 120 grams rolled oats
  • 10 grams salt
  • 30 grams sesame seeds
  • 60 grams sunflower seeds
  • 480 ml warm water
  • 480 grams whole wheat flour

Directions

Step 1
In a large bowl, combine the whole wheat flour, all-purpose flour, rolled oats, flax seeds, sunflower seeds, sesame seeds, and salt.
Step 2
In a separate bowl, dissolve the honey in the warm water and then sprinkle the yeast on top. Let it sit for about 5 minutes until frothy.
Step 3
Pour the yeast mixture and olive oil into the dry ingredients. Stir until a dough forms.
Step 4
Turn the dough out onto a floured surface and knead for about 10 minutes until smooth and elastic.
Step 5
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Step 6
Punch down the dough and divide it into two equal parts. Shape each part into a loaf and place them in greased loaf pans.
Step 7
Cover and let rise again for about 30 minutes or until doubled in size.
Step 8
Preheat the oven to 375°F (190°C).
Step 9
Bake the loaves for 35-40 minutes, or until golden brown and the bread sounds hollow when tapped on the bottom.
Step 10
Remove from the oven and let cool on a wire rack before slicing.
