Directions
Step 1
Preheat your oven to 200°C (400°F).
Step 2
Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 35 minutes until soft.
Step 3
Boil the peeled and cubed potatoes in salted water until tender, about 15 minutes.
Step 4
Drain the potatoes and return them to the pot.
Step 5
Squeeze the roasted garlic out of its skins and add to the potatoes.
Step 6
Add butter and milk to the pot and mash until smooth.
Step 7
Season with salt and pepper to taste.
Step 8
Serve hot and enjoy.
