Ingredients

  • 30 grams butter
  • 30 grams cornstarch
  • 4 egg yolks
  • 120 ml lemon juice
  • 1 tablespoon lemon zest
  • 500 ml milk
  • 1 pinch salt
  • 200 grams sugar

Directions

Step 1
In a medium saucepan, combine sugar, cornstarch, and salt.

Gradually whisk in milk until the mixture is smooth.

Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.

Boil for 1 minute, then remove from heat.
Step 5
In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot mixture into the yolks, whisking constantly.

Return the egg yolk mixture to the saucepan and cook over medium heat for 2 minutes, stirring constantly.
Step 7
Remove from heat and stir in lemon zest, lemon juice, and butter until the butter is melted and the mixture is smooth.
Step 8
Pour the pudding into individual serving dishes and let cool to room temperature.
Step 9
Refrigerate for at least 2 hours before serving.
