Collect dandelion petals, making sure to remove all green parts.

Rinse the petals thoroughly to remove any dirt or insects.

In a large pot, bring water to a boil and add the dandelion petals.

Simmer the petals for 10 minutes, then strain the liquid through a fine mesh sieve or cheesecloth, discarding the petals.

Return the strained liquid to the pot and add the lemon juice and powdered fruit pectin.

Bring the mixture to a rolling boil, then add the sugar, stirring constantly.

Continue to boil the mixture for 1-2 minutes, or until the sugar is completely dissolved.

Remove from heat and skim off any foam that has formed on the surface.

Pour the jelly into sterilized jars, leaving a little headspace, and seal immediately.
