  • 60 g almonds
  • 0.5 tsp black pepper
  • 2 stalks celery
  • 2 pieces chicken breast
  • 15 ml dijon mustard
  • 120 g grapes
  • 240 g Greek yogurt
  • 15 ml lemon juice
  • 15 g parsley
  • 0.5 pieces red onion
  • 1 tsp salt

Directions

Step 1
Cook the chicken breasts in boiling water until fully cooked, about 15-20 minutes. Allow them to cool, then chop into bite-sized pieces.
Step 2
In a large bowl, combine the Greek yogurt, lemon juice, Dijon mustard, salt, and black pepper. Mix well to create the dressing.
Step 3
Add the chopped chicken, celery, red onion, grapes, and sliced almonds to the bowl. Stir until all ingredients are evenly coated with the dressing.
Step 4
Garnish with fresh parsley and serve chilled or at room temperature.
