Heat the olive oil in a skillet over medium-high heat. Brown the chicken breasts on both sides, then transfer them to the slow cooker.

In the same skillet, add the chopped onion, sliced bell peppers, and mushrooms. Cook until they begin to soften, about 5 minutes.

Add the minced garlic to the skillet and cook for another minute.
