  • 2 bell pepper
  • 0.5 tsp black pepper
  • 4 chicken breasts
  • 240 ml chicken broth
  • 400 g diced tomatoes
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 4 garlic cloves
  • 200 g mushrooms
  • 2 tbsp olive oil
  • 1 onion
  • 1 tsp salt
  • 60 g tomato paste

Directions

Step 1
Heat the olive oil in a skillet over medium-high heat. Brown the chicken breasts on both sides, then transfer them to the slow cooker.
Step 2
In the same skillet, add the chopped onion, sliced bell peppers, and mushrooms. Cook until they begin to soften, about 5 minutes.
Step 3
Add the minced garlic to the skillet and cook for another minute.
Step 4
Transfer the vegetables and garlic to the slow cooker.
Step 5
Add the canned diced tomatoes, tomato paste, chicken broth, dried oregano, dried basil, salt, and black pepper to the slow cooker. Stir to combine.
Step 6
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
Step 7
Serve hot over pasta, rice, or alongside crusty bread.
