  • 130 g all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 100 g brown sugar
  • 150 g chocolate chips
  • 1 egg
  • 1 tsp ground cinnamon
  • 240 ml milk
  • 120 g rolled oats
  • 0.5 tsp salt
  • 1 tsp vanilla extract
  • 60 ml vegetable oil

Directions

Step 1
Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
Step 2
In a bowl, combine the rolled oats and milk. Let them soak for about 10 minutes.

In another bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.

In a large mixing bowl, beat the egg. Add the vegetable oil, brown sugar, and vanilla extract, and mix until well combined.

Stir the soaked oats into the wet mixture.

Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Fold in the chocolate chips.

Divide the batter evenly among the muffin cups, filling each about 3/4 full.
