Step 1
Rinse and sort the red beans, then soak them in water overnight.
Step 2
Drain and rinse the beans. In a large pot, add the beans and 2000 ml of water. Bring to a boil, then reduce heat and simmer for 1.5 hours.
Step 3
In a separate pan, heat the olive oil over medium heat. Sauté the onion, green bell pepper, celery, and garlic until tender.
Step 4
Add the sautéed vegetables to the pot with the beans. Stir in the Cajun seasoning, bay leaves, salt, and black pepper.
Step 5
Add the smoked sausage to the pot. Continue to simmer for another 30 minutes, stirring occasionally.
Step 6
Remove bay leaves. Serve the red beans over cooked white rice. Garnish with chopped green onions.
