  • 30 g butter
  • 30 g cornstarch
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 15 ml lemon juice
  • 2 pie crusts
  • 350 g raisins
  • 1 pinch salt
  • 200 g sugar
  • 240 ml water

Directions

Step 1
Preheat your oven to 220°C (425°F).
Step 2
In a medium saucepan, combine raisins and water. Cook over medium heat until raisins are plump, about 10 minutes.
Step 3
In a small bowl, mix together sugar, cornstarch, salt, cinnamon, and nutmeg. Stir this mixture into the raisins.
Step 4
Cook, stirring constantly, until the mixture thickens and bubbles. Remove from heat and stir in lemon juice and butter.
Step 5
Roll out one pie crust and fit it into a 9-inch pie plate. Pour the raisin filling into the crust.
Step 6
Roll out the second pie crust and place it over the filling. Trim and crimp the edges to seal. Cut several small slits in the top crust to allow steam to escape.
Step 7
Bake in the preheated oven for 30 minutes, or until the crust is golden brown. Let cool before serving.
