Step 1
Line a baking dish with parchment paper and set aside.

In a large saucepan, combine sugar, light corn syrup, and butter. Cook over medium heat, stirring constantly until mixture is melted and well combined.

Slowly add the heavy cream while continuing to stir. Attach a candy thermometer to the saucepan.

Cook the mixture, stirring occasionally, until it reaches 120°C. This will take about 10-15 minutes.
Step 5
Remove the saucepan from heat and stir in the vanilla extract and sea salt.
Step 6
Pour the caramel mixture into the prepared baking dish and let it cool completely at room temperature.
Step 7
Once cooled, cut the caramel into small squares and wrap each piece in wax paper.
