  • 30 g butter
  • 30 g cornstarch
  • 3 egg yolks
  • 240 ml orange juice
  • 1 tbsp orange zest
  • 1 pie crust
  • 1 pinch salt
  • 200 g sugar
  • 240 ml water

Directions

Step 1
In a medium saucepan, combine sugar, cornstarch, and salt.
Step 2
Stir in orange juice, orange zest, and water. Cook over medium heat, stirring constantly, until the mixture thickens and boils. Boil for 1 minute, then remove from heat.
Step 3
Gradually stir about half of the hot mixture into the beaten egg yolks, then return the egg mixture to the saucepan. Cook for 2 minutes more, stirring constantly. Remove from heat and stir in butter until melted.
Step 4
Pour the filling into the baked pie crust. Chill in the refrigerator for at least 2 hours before serving.
