Step 1
Heat the olive oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Stir in the diced carrot and minced garlic, and cook for another 2 minutes.

Add the tomato paste and cook for another minute, stirring constantly.

Add the rinsed red lentils and water to the pot, and bring to a boil.

Reduce heat to low, cover, and let simmer for 25-30 minutes, or until the lentils are tender.

Stir in the dried mint, salt, black pepper, and paprika.

Use an immersion blender to puree the soup until smooth. You can also transfer the soup to a blender in batches and puree until smooth.

Stir in the lemon juice and adjust seasoning if needed.
