Ingredients

  • 450 g andouille sausage
  • 1 bay leaf
  • 1.5 tbsp cajun seasoning
  • 2 stalks celery
  • 450 g chicken breast
  • 250 ml chicken broth
  • 800 g diced tomatoes
  • 3 cloves garlic
  • 1 green bell pepper
  • 1 onion
  • 200 g rice
  • 450 g shrimp
  • 1 tsp thyme

Directions

Step 1
Place the chicken, sausage, shrimp, onion, bell pepper, celery, and garlic in the slow cooker.
Step 2
Stir in the diced tomatoes, chicken broth, cajun seasoning, thyme, and bay leaf.
Step 3
Cover and cook on low for 7-8 hours or on high for 3-4 hours.
Step 4
In the last 30 minutes of cooking, add the uncooked rice and stir well.
Step 5
Continue to cook until the rice is tender.
Step 6
Remove the bay leaf before serving. Enjoy your homemade Jambalaya!
