Farinata is a traditional Italian chickpea flour pancake, crispy on the outside and soft inside. Perfect as an appetizer or snack.
Directions
Step 1
In a large bowl, whisk the chickpea flour and water until smooth. Cover and let the batter rest for at least 4 hours at room temperature.
Step 2
Preheat your oven to 220°C (428°F).

Skim off any froth from the surface of the batter. Stir in the olive oil and salt.
Step 4
Pour the batter into a large, well-oiled baking pan, aiming for a thickness of about 5-7 mm.
Step 5
Sprinkle the fresh rosemary on top.
Step 6
Bake in the preheated oven for 25-30 minutes, or until the farinata is golden and crispy around the edges.
Step 7
Remove from the oven and let it cool slightly before cutting into wedges. Serve warm.
