Preheat your oven to 175°C (350°F). Grease and flour two 23 cm (9 inch) round cake pans.

In a large bowl, beat the eggs and granulated sugar together until light and fluffy.

Gradually mix in the flour until just combined. Divide the batter evenly between the prepared pans.

Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool completely.

While the cakes are cooling, prepare the mascarpone filling. In a separate bowl, beat the mascarpone cheese, heavy cream, vanilla extract, and powdered sugar together until smooth and thick.
