Ingredients

  • 2 tbsp cocoa powder
  • 250 ml coffee
  • 6 eggs
  • 150 g flour
  • 250 ml heavy cream
  • 500 g mascarpone cheese
  • 100 g powdered sugar
  • 200 g sugar
  • 1 tsp vanilla extract

Directions

Step 1
Preheat your oven to 175°C (350°F). Grease and flour two 23 cm (9 inch) round cake pans.
Step 2
In a large bowl, beat the eggs and granulated sugar together until light and fluffy.
Step 3
Gradually mix in the flour until just combined. Divide the batter evenly between the prepared pans.
Step 4
Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool completely.
Step 5
While the cakes are cooling, prepare the mascarpone filling. In a separate bowl, beat the mascarpone cheese, heavy cream, vanilla extract, and powdered sugar together until smooth and thick.
Step 6
Once the cakes are cool, slice each cake in half horizontally to create four layers.
Step 7
Place one layer on a serving plate and brush it generously with the brewed coffee.
Step 8
Spread a portion of the mascarpone filling over the soaked cake layer.
Step 9
Repeat with the remaining layers, brushing each with coffee and spreading with mascarpone filling, finishing with a layer of filling on top.
Step 10
Dust the top of the cake with cocoa powder.
Step 11
Refrigerate the cake for at least 2 hours before serving to allow the flavors to meld.
