  • 7 g active dry yeast
  • 480 g all-purpose flour
  • 200 g brown sugar
  • 2 tsp cinnamon
  • 2 eggs
  • 50 g granulated sugar
  • 120 ml heavy cream
  • 200 g pecans
  • 1 tsp salt
  • 115 g unsalted butter
  • 240 ml whole milk

Directions

Step 1
Warm the milk until it reaches about 43°C (110°F). Add the granulated sugar and yeast, then let it sit for 5-10 minutes until foamy.
Step 2
In a large bowl, combine the flour and salt. Add the yeast mixture, melted butter, and eggs. Mix until a dough forms.
Step 3
Knead the dough on a floured surface for about 10 minutes, until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
Step 4
While the dough is rising, prepare the pecan topping. In a saucepan, combine the brown sugar, pecans, and heavy cream. Cook over medium heat until the sugar is dissolved and the mixture is bubbling. Pour the pecan mixture into the bottom of a greased baking dish.
Step 5
Punch down the risen dough and roll it out into a large rectangle on a floured surface. Sprinkle the dough with the cinnamon.
Step 6
Roll the dough tightly from one long side to the other, forming a log. Cut the log into 12 equal pieces and place them cut side down in the baking dish on top of the pecan mixture.
Step 7
Cover the dish and let the buns rise for another 30 minutes. Preheat the oven to 180°C (350°F).
Step 8
Bake the buns for 25-30 minutes, or until golden brown and cooked through. Allow to cool slightly before inverting onto a serving platter so the pecan topping is on top.
