Spanakopita is a traditional Greek pie made with spinach, feta cheese, and layers of crispy phyllo dough. This savory dish is perfect as a main course or a side dish.
Directions
Step 1
Preheat the oven to 180°C (350°F).

Heat olive oil in a large pan over medium heat, add the chopped onion, and sauté until golden.

Add the chopped spinach to the pan and cook until wilted. Remove from heat and let it cool.

In a large bowl, combine the cooked spinach and onion mixture with the crumbled feta, beaten eggs, chopped dill, parsley, salt, and pepper. Mix well.

Brush a baking dish with olive oil and layer 8 sheets of phyllo dough, brushing each sheet with olive oil.
Step 6
Spread the spinach mixture evenly over the phyllo layers.
Step 7
Layer the remaining 8 sheets of phyllo dough on top, brushing each sheet with olive oil.

Bake in the preheated oven for 45 minutes, or until golden brown and crispy.

Allow to cool slightly before cutting into squares and serving.
