Step 1
Season the short ribs with salt and pepper.

Heat olive oil in a large skillet over medium-high heat.

Brown the short ribs on all sides, then transfer to the slow cooker.

In the same skillet, add onions, carrots, and celery, and cook until softened.

Add garlic and tomato paste, and cook for another minute.

Pour in the red wine and bring to a boil, scraping up any browned bits from the bottom of the skillet.

Add the beef broth and bring to a simmer.

Pour the mixture over the short ribs in the slow cooker.

Add bay leaves and thyme to the slow cooker.
