  • 2 tbsp black pepper
  • 1 tbsp garlic powder
  • 3 tbsp kosher salt
  • 2 tbsp olive oil
  • 4.5 kg prime rib roast
  • 2 tbsp rosemary
  • 2 tbsp thyme

Directions

Step 1
Preheat your oven to 260°C (500°F).
Step 2
In a small bowl, mix together kosher salt, black pepper, garlic powder, rosemary, and thyme.

Rub the olive oil over the entire surface of the prime rib roast.

Apply the seasoning mix evenly over the roast, ensuring all sides are well covered.

Place the roast bone-side down in a roasting pan.

Roast in the preheated oven for 15 minutes to sear the outside.

Reduce the oven temperature to 135°C (275°F) and continue roasting until the internal temperature reaches your desired doneness (around 2-2.5 hours for medium-rare).
