Ingredients

  • 1 bay leaf
  • 0.5 tsp black pepper
  • 400 g canned beans
  • 500 ml chicken broth
  • 200 g chourico sausage
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 1 onion
  • 250 g rice
  • 1 tsp salt
  • 2 tbsp tomato paste

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the chopped onion and minced garlic, and sauté until softened.
Step 3
Add the sliced chourico sausage to the pot and cook until browned.
Step 4
Stir in the tomato paste and cook for another 2 minutes.
Step 5
Add the rice and stir to coat with the mixture.
Step 6
Pour in the chicken broth and add the bay leaf, salt, and black pepper.
Step 7
Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked.
Step 8
Stir in the canned beans and cook for an additional 5 minutes.
Step 9
