Rinse the sushi rice under cold water until the water runs clear.

Cook the sushi rice according to the package instructions and let it cool slightly.

Mix the rice vinegar into the cooked rice and let it cool to room temperature.

Place a bamboo sushi mat on a flat surface and cover it with plastic wrap.

Lay one nori sheet on the bamboo mat, shiny side down.

Spread a thin layer of sushi rice over the nori sheet, leaving a 2 cm border at the top.

Add a line of spicy mayonnaise across the center of the rice.

Place a few slices of yellowtail, avocado, and cucumber on top of the spicy mayonnaise.

Using the bamboo mat, carefully roll the sushi, applying gentle pressure to form a tight roll.

Slice the roll into 6-8 pieces with a sharp knife, wiping the knife with a damp cloth between cuts.
