Delicious Argentinian cookies filled with creamy dulce de leche and coated with shredded coconut. Perfect for a sweet treat or dessert.

Step 1
Preheat your oven to 180°C (350°F).

In a bowl, mix together the vanilla rum, lemon extract, and egg yolks until smooth.

Add the flour and mix until a dough forms.
Step 4
Roll out the dough on a floured surface to a thickness of about 5mm and cut out circles using a cookie cutter.

Place the cookies on a baking sheet lined with parchment paper and bake for 10-12 minutes or until lightly golden.
Step 6
Let the cookies cool completely.
Step 7
Spread dulce de leche on the flat side of a cookie and sandwich with another cookie.
Step 8
Roll the edges of the cookie sandwich in shredded coconut.
