Ingredients

  • 480 g all-purpose flour
  • 1.5 g baking soda
  • 15 g cornmeal
  • 22.5 g granulated sugar
  • 7 g instant yeast
  • 240 ml milk
  • 9 g salt
  • 240 ml water

Directions

Step 1
In a large mixing bowl, combine the flour, sugar, salt, baking soda, and instant yeast.
Step 2
In a small saucepan, heat the milk and water until very warm (120°F to 130°F).
Step 3
Add the warm milk mixture to the dry ingredients and beat until well combined.
Step 4
Spoon the batter into a greased 9x5-inch loaf pan that has been sprinkled with cornmeal.

Cover and let rise in a warm place until doubled in size, about 45 minutes.
Step 6
Preheat the oven to 375°F (190°C).
Step 7
Bake the bread for 25-30 minutes, or until golden brown and the internal temperature reaches 200°F (93°C).
Step 8
Remove from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
