Quick Microwave Sponge Cake

This quick and easy microwave sponge cake is perfect for when you're craving something sweet but don't have much time. Ready in just a few minutes, it's light, fluffy, and delicious.

Ingredients

  • 50 g butter
  • 50 g caster sugar
  • 1 egg
  • 2 tbsp jam
  • 1 tbsp milk
  • 50 g self-raising flour
  • 1 tsp vanilla extract

Directions

Step 1
In a microwave-safe bowl, melt the butter.
Step 2
Add the sugar, flour, egg, milk, and vanilla extract to the melted butter. Mix well until smooth.
Step 3
If using jam, add it to the bottom of a microwave-safe mug or bowl.
Step 4
Pour the batter over the jam (if using) or directly into the mug or bowl.
Step 5
Microwave on high for 2-3 minutes, or until the sponge is cooked through and springs back when touched.
Step 6
Allow to cool slightly before serving. Enjoy!
