This traditional Portuguese cornbread, known as Broa, is a dense and flavorful bread made with a mixture of cornmeal and wheat flour. It pairs perfectly with soups, stews, and can be enjoyed on its own.

Ingredients

  • 500 g cornmeal
  • 7 g dry yeast
  • 30 ml olive oil
  • 10 g salt
  • 600 ml water
  • 250 g wheat flour

Directions

Step 1
In a large bowl, mix the cornmeal and wheat flour.

In a separate bowl, dissolve the yeast in warm water and let it sit for about 5 minutes.

Add the yeast mixture, salt, and olive oil to the dry ingredients and mix until a dough forms.

Knead the dough on a floured surface for about 10 minutes until smooth.

Place the dough in an oiled bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

Preheat your oven to 220°C (425°F).

Punch down the dough and shape it into a round loaf. Place it on a baking sheet lined with parchment paper.

Bake in the preheated oven for about 40 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom.

Allow the bread to cool on a wire rack before slicing and serving.
