  • 3 bananas
  • 30 g butter
  • 30 g cornstarch
  • 2 egg yolks
  • 500 ml milk
  • 1 pie crust
  • 1 pinch salt
  • 100 g sugar
  • 5 ml vanilla extract
  • 200 ml whipped cream

Directions

Step 1
Bake the pie crust according to package instructions and let it cool.
Step 2
Arrange sliced bananas evenly in the cooled pie crust.
Step 3
In a saucepan, combine milk, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.

In a separate bowl, whisk the egg yolks. Slowly add a small amount of the hot milk mixture to the egg yolks, whisking constantly to temper them.

Return the egg yolk mixture to the saucepan and cook for an additional 2 minutes, stirring constantly.

Remove the saucepan from the heat and stir in the butter and vanilla extract until smooth.
Step 7
Pour the pudding mixture over the bananas in the pie crust and smooth the top.

Chill the pie in the refrigerator for at least 2 hours or until set.
Step 9
Before serving, top with whipped cream and additional banana slices if desired.
