  • 1 cup Boiling water
  • 1 cup Cold water
  • 3 Eggs
  • 1 box Lemon cake mix
  • 1 box Lemon Jell-O mix
  • 1 tablespoon Lemon zest
  • 0.5 cup Vegetable oil
  • 1 cup Water
  • 1 container Whipped topping

Directions

Step 1
Preheat your oven to 350°F (175°C).
Step 2
Prepare the lemon cake mix according to the package instructions, using the water, vegetable oil, and eggs.
Step 3
Pour the batter into a greased 9x13 inch baking dish and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Allow the cake to cool for 15 minutes, then use a fork to poke holes all over the top of the cake.
Step 5
In a medium bowl, dissolve the lemon Jell-O mix in the boiling water. Stir in the cold water.
Step 6
Pour the Jell-O mixture evenly over the cake, making sure it gets into the holes. Refrigerate the cake for at least 2 hours.
Step 7
Spread the whipped topping over the cake and sprinkle with lemon zest. Refrigerate until ready to serve.
