  • 2 green onions
  • 2 cups leftover mashed potatoes
  • 0.5 tsp pepper
  • 0.5 tsp salt

Directions

Step 1
In a large bowl, combine the leftover mashed potatoes, egg, flour, chopped green onions, salt, and pepper.
Step 2
Heat vegetable oil in a large skillet over medium heat.

Scoop about 1/4 cup of the potato mixture into the skillet and flatten it with a spatula to form a pancake.
