  • 300 grams all-purpose flour
  • 1 teaspoon baking powder
  • 100 grams butter
  • 200 grams dried apricots
  • 2 tablespoons lemon juice
  • 150 ml milk
  • 2 peaches
  • 1 teaspoon salt
  • 150 grams sugar
  • 500 ml vegetable oil
  • 250 ml water

Directions

Step 1
Combine dried apricots, peaches, sugar, lemon juice, and water in a saucepan. Cook over medium heat until the fruit is soft and the liquid is reduced, about 20 minutes. Let it cool.
Step 2
In a large bowl, mix the flour, baking powder, and salt. Add the butter and use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.
Step 3
Add the milk gradually, mixing until a dough forms. Knead lightly on a floured surface.
Step 4
Roll out the dough to a thickness of about 0.5 cm. Cut out circles using a cookie cutter or a glass.

Place a spoonful of the fruit mixture in the center of each dough circle. Fold the dough over the filling and press the edges with a fork to seal.
Step 6
Heat the vegetable oil in a large skillet over medium-high heat. Fry the pies in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

Serve the fried pies warm or at room temperature.
