Peel and finely chop the onion and garlic cloves.

Wash and dice the tomatoes, green bell peppers, red bell pepper, and zucchinis.

Heat the olive oil in a large pan over medium heat.

Add the chopped onion and garlic to the pan and sauté until they are soft and translucent.

Add the diced green and red bell peppers to the pan and cook for about 5 minutes, stirring occasionally.

Add the diced zucchinis and cook for an additional 5 minutes.

Finally, add the diced tomatoes, salt, and black pepper. Stir well to combine all the ingredients.

Reduce the heat to low, cover the pan, and let it simmer for about 30 minutes, stirring occasionally, until all the vegetables are tender and the flavors have melded together.

Serve hot, optionally with a fried egg on top or with some crusty bread on the side.
