Directions
Step 1
Cook the diced bacon in a large skillet over medium heat until crispy. Remove with a slotted spoon and drain on paper towels.

Remove all but 2 tablespoons of bacon fat from the skillet. Add the chopped onions and cook until they are soft and translucent, about 10 minutes.

Add the minced garlic and cook for another minute.

Stir in the brown sugar, apple cider vinegar, maple syrup, brewed coffee, black pepper, and cayenne pepper.

Bring the mixture to a boil, then reduce the heat to low and simmer for about 35-40 minutes, stirring occasionally, until it thickens to a jam-like consistency.

Return the cooked bacon to the skillet and stir to combine. Continue to simmer for an additional 10 minutes.

Remove from heat and let cool slightly. Transfer the mixture to a food processor and pulse a few times until it reaches your desired consistency.

Store the bacon jam in an airtight container in the refrigerator for up to two weeks.
